George’s Pasta Salad

This zesty pasta dish will liven any occasion.

3 cup dried rigatoni

2/3 cup orange juice

1 tablsp lemon juice

2 tablsp honey

1 clove garlic, crushed

2 green onions

1 celery stalk

1/3 cup dried raisins

1 tablesp fresh mint

2 tablesp chopped cilantro

1 apple, cored and diced

1 orange, segmented

Serves 6


  1. Cook pasta in a large saucepan of boiling, salted water until al dente. Drain thoroughly and rinse under cold water.
  2. Mix orange juice, lemon, honey, garlic, onions, celery stalk, raisins, mint, and cilantro in a bowl. Set aside.
  3. Put pasta in a bowl; add chicken, dressing, apple, and orange in a bowl. Add dressing, toss well.
  4. Garnish with mint.
